Is there any way to create horizontal linear gradients or do I have to make a vertical and rotate it?
Well when you first apply a gradient fill it defaults to a verticle one, but there is a tool that you can use that lets you play with the format of the fill including its rotation. Its called the fill transform tool and is third from the bottom on the right hand side of the tool bar
