At WWDC19, Craig mentioned in the keynote that there were over 450,000 apps using Swift.
And a quick search seems to imply there are roughly 2mil apps on the app store. I’d say that paints a bit of a picture of 25%, not factoring in the new app to old ratios
I dabble with various programming languages just for fun. As one datapoint, when I tried to build a Swift app a few years ago, there were still some APIs that I needed that needed me to go into Objective-C. A few months ago, when I tried again, I was able to fully build my app using just Swift without having to write any Objective-C. From a language capabilities point of view, Swift has definitely done a great job here closing the gap!
