If I set my iPod to sync with my computer, will it only add the songs that I have check marked? I don’t want to try it out of the fear that I will get 3 billion tons of crap on there if it adds everything.
Yes it only syncs what is checked. I personally drag my albums I want over by hand and have found this to be the best and easiest solution (it also keeps the ipod clean of random folders/albums with 1 song).
I do that too because it’s way better, but for some reason the stuff in my iTunes started changing albums and deleting artwork which made it impossible to create playlists I could add to my iPod without having to change a bunch of songs. I thought syncing them might alleviate this.

Yea, I use my iPod touch to organize my playlists 
I wish you could create and save playlists on the touch. Not just the On The Go thing, but actual playlists you can name and that stay forever. I don’t know why Apple didn’t implement that.
