Probably the quad-core, but it depends on how your specific software is able to utilize it.

And aren’t Xenons server CPUs?

Yeah, but they can easily be used in a desktop as well.

Generalizing to the extreme, multiple “cores” will improve performance more for people like me, that jump between lot of “CPU light weight” applications such as flash, photoshop, illustrator et cetera. CPU intense applications such as any render software (maya, 3ds, after effects) won’t show as much of a performance boost from multiple cores since they tend to max out their allowance. If you tend to do a lot of things at the same time however, quad cores for zie win.

(Just recently bought a macpro dual 3.2 quad core (8 cores) and it’s a beast! sexy beast :P)

2 dual core cpus have 2 blocks of level 2 cache. The quad core cpu has 1 block of level 2 cache. So if you are using a bunch of programs that have nothing to do with each other, the dual core solution is better. If you are using a processor intensive application that has multiple threads sharing resources, the quad core is better.

As already mentioned, depends on the software.

If you are deciding between those two, you should better choose the Quad-Core, it is faster.
