I was trying to send my girlfriend a text message and looked at the word after I typed it and thought wt? so I went and looked it up. It still looks funny now.

Basically, even though they can’t themselves be heard, they modify who the other letters around them sound…
Having double consonants identifies certain stressed syllables. It’s the same reason why there are two 's’s in ‘dessert’ and only one in ‘desert’, an example you most likely wouldn’t think of as odd.
Also some words (if not most) are derived from ancient languages such as Latin or greek, which is why when you look up words, you’ll usually find a few Latin origins.
If ‘plumber’ didn’t have that b in it, then you would pronounce it as “plumer” or “ploomer” (someone who feathers something?).
But you want an oddly spelled word? Try Onomatopoeia (pronounced ‘onamonapeeya’).

Actually a lot of English words are derived from European languages, such as German. As well as Latin obviously, from when we were ruled by the Romans…
And a few from Anglo-Saxon but if it typed them **** ****** ******* ********* is meaningless
